Summer Sausage & Veggie Sheet Pan

This one-pan summer veggie sausage bake is my go-to for busy summer nights when the schedule starts getting thrown out the window. Just toss everything on a sheet pan, season with Famous Dave’s Steak Seasoning, and let the oven do the work. The secret? Overcrowding the pan so the tomatoes and zucchini turn into the most amazing sauce. Think baked feta pasta, but better and we're coating vegetables not pasta.

Notes

🔄 Bell Peppers → Swap with carrots, broccoli, or snap peas for crunch. 🔄 Yellow Onions → Use red onions, shallots, or even leeks for a slightly different flavor. 🔄 Green Beans → Sub with asparagus, cauliflower florets, or sliced Brussels sprouts. 🔄 Cherry Tomatoes → Any small tomato variety works—grape tomatoes, Campari, or even diced Roma tomatoes. 🔄 Zucchini → Replace with yellow squash, eggplant, or thinly sliced sweet potatoes for a heartier version. 🔄 Famous Dave’s Steak & Burger Seasoning → Try Montreal Steak Seasoning, Italian seasoning, or a mix of garlic powder, smoked paprika, and salt. 🔄 Lemon Juice → Just leave it out! 🔄 Parmesan Cheese → Just leave it out!
