Sweet Pork Tacos with Caramelized Onions + Pineapple

This recipe was inspired by my favorite restaurant tacos, but made in a way that actually works at home. The pork is sweet, saucy and a little crispy at the edges. Then it gets topped with caramelized onions, pineapple, cilantro, and queso fresco! It tastes like you worked all day on it, but really the oven did most of the heavy lifting.

Notes

Ingredient Substitutions:
🔄 Pork Shoulder → Boneless is easiest, but bone-in is fine. Just increase the weight slightly since the bone adds 2 to 3 pounds. Pork butt work too! You could also use chicken thighs. Reduce cook time to about 1 1/2 hours and check earlier.
🔄 Taco Seasoning → Homemade taco seasoning (2 tablespoons chili powder + 1 teaspoon cumin + 1 teaspoon garlic powder + 1 teaspoon onion powder + 1 teaspoon salt) or Taco Bell Sauce
🔄 Coca-Cola → Regular Coke is best for flavor and caramelization, but you can use Dr Pepper, Root beer, or Orange juice for a less sweet, more citrusy version. If you don't have any soda you can use extra chicken broth in replace of soda.
🔄 Chicken Broth → Vegetable broth, Water + bouillon cube, or just water + salt if you’re in a pinch
🔄 Enchilada Sauce → Mild taco sauce
🔄 Brown Sugar → Honey or White sugar
🔄 Fresh Pineapple → Canned pineapple (drained well), Frozen pineapple (thawed and patted dry), or skip!
🔄 Caramelized Onions → Quick sauteed onions if you don’t want to fully caramelize

Toppings:
You can keep it simple or do it all The pork is delicious on its own, but the caramelized onions, pineapple, cilantro, lime, queso fresco, and street corn take it over the top. If you're short on time/energy, then just make the street corn.

Easy Street Corn Recipe:
2 (10 oz) bags frozen corn
1/2 (10 oz) package queso fresco
1 bunch cilantro, chopped
1/2 bunch green onions, thinly sliced
2 limes, juiced
Salt

Feeding a Crowd:
Broil the pork on a large sheet pan for crispy edges, then keep warm in the oven until serving. To stretch it further, add ground chicken seasoned with taco seasoning and a little of the pork sauce.

Make Ahead:
Cook and shred the pork, skip the broiling step, and freeze. When ready to serve, thaw in the refrigerator, warm in the microwave, then broil before serving for crispy edges.
