Pork Banh Mi Bowls

This is my weeknight version of a banh mi situation. Saucy ground meat, quick pickles, lots of herbs, and rice all piled into a bowl. It has all the flavors I love from the sandwich but is way easier to make and even easier to eat.

Notes

Ingredient Substitutions:
🔄 Ground pork or chicken → Either works great here. Ground pork is a little richer and more traditional for banh mi flavors, but ground chicken keeps it lighter and is usually what I have in the fridge. Ground turkey works too.
🔄 Frozen jasmine rice → This is my favorite shortcut, but you can absolutely use freshly cooked jasmine or basmati rice. Brown rice also works if that’s what your family prefers.
🔄 Rice vinegar → Apple cider vinegar or white wine vinegar will work in a pinch. The flavor will be slightly different but still good.
🔄 Mini cucumbers → English cucumber or regular cucumbers work too. Just slice them thin and you’re good to go.
🔄 Fish sauce → Fish sauce adds that classic banh mi depth of flavor, but if you don’t have it you can swap in extra soy sauce plus a squeeze of lime.
🔄 Hoisin sauce → Brown sugar or maple syrup both work here. It just adds a little sweetness to balance the sauce.
🔄 Sriracha or chili crunch → Use whichever spicy thing you have. Sambal oelek, chili garlic sauce, or even red pepper flakes work.
🔄 Fresh herbs → Cilantro is the most classic, but mint or Thai basil are also really good here. Even just green onions will add some freshness if herbs aren’t your thing.

Recipe Notes:
Don’t skip the herbs → It might feel like a small thing, but the fresh cilantro or mint really wakes the whole bowl up. Even a small handful makes everything taste brighter.

The pickles can be made ahead → If you have five minutes earlier in the day, make the carrots and cucumbers and keep them in the fridge. They get even better as they sit.

Ground pork = most traditional → But ground chicken is what I usually use because it’s what I have most often. Both are great.

Frozen rice is the move → Freshly cooked rice is wonderful, but frozen jasmine rice makes this dinner happen in about 30 minutes and that’s usually what I’m aiming for on a weeknight.

Great leftover lunch → Everything stores well separately in the fridge, so you can build bowls all week. I even eat the saucy meat over salad sometimes.
