BBQ Sloppy Joes with Coleslaw

If there’s one dinner that checks all the boxes—quick, easy, kid-approved, and super flavorful—it’s these BBQ Sloppy Joes. This recipe is a fun twist on the classic we all grew up with, but way better (and easier!). Instead of a long list of ingredients, we’re keeping it simple with BBQ sauce as the star. It brings all the smoky, tangy-sweet flavor without the extra work. The meat cooks in one pan, the coleslaw can be made ahead (or grabbed from the store), and the whole meal is on the table in about 30 minutes.

Ingredient Substitutions: 🔄 Mayonnaise → Sour cream if you're already using it—just increase the amount slightly 🔄 Sour Cream → More mayo if you don’t have sour cream or buttermilk for a thinner, tangier slaw (use a bit less) 🔄 Apple Cider Vinegar → White vinegar, Lemon juice, Red wine vinegar 🔄 Sugar → Honey or brown sugar 🔄 Celery salt → Regular salt or garlic salt 🔄 Coleslaw mix → Shredded cabbage and carrots (if you have them separately), Broccoli slaw mix for a crunchier texture, Kale or shredded Brussels sprouts for a twist 🔄 Green onions → 1/4 red onion, chives, or garlic powder 🔄 Jalapeño → poblano pepper (for milder spice) or green bell pepper (for no spice) 🔄 Ground Beef → ground turkey or ground chicken 🔄 Yellow onion → white onion, red onion, 2 shallots, 2 teaspoons onion powder, or 2 teaspoons garlic powder 🔄 Green bell pepper → Any color bell pepper, diced zucchini, diced mushrooms, or frozen mixed veggies (chopped) 🔄 Petite diced tomatoes → regular diced tomatoes, Crushed tomatoes or tomato sauce (texture will be smoother), or fresh chopped tomatoes (about 1.5 cups) 🔄 BBQ sauce → 3/4 Cup Ketchup + 2 Tablespoons Dark or Light Brown Sugar + 2 Tablespoons Dijon Mustard + 2 Tablespoons Worcestershire Sauce + 1 Tablespoon Chili Powder + 1 teaspoon Smoked Paprika + 1/4 Cup Apple Cider Vinegar 🔄 Worcestershire sauce → Soy sauce or Steak sauce like A1 🔄 Burger seasoning → Salt + pepper + garlic powder + paprika 🔄 Buns → Hawaiian rolls for mini sliders, lettuce wraps, or sweet potatoes Make-Ahead Tips: ✔️ Chop the onion and bell pepper earlier in the day (or even the night before). ✔️ Make the coleslaw the day before—it tastes better once the flavors sit anyway. ✔️ Cook the meat mixture ahead of time and reheat it right before serving.
