Jalapeno Popper Mashed Potatoes

Your new favorite holiday side dish!!! It's my jalapeño popper dip meets mashed potatoes and it's out of this world! I use store-bought mashed potatoes to keep it easy, then stir in bacon, cheese, and peppers. It's the easiest side dish and it needs to be on your holiday table!

Notes

Ingredient substitutions: 🔄 Mashed potatoes → You can use homemade mashed potatoes (russet, Yukon gold, or even cauliflower mash for a lighter version). Instant mashed potatoes work too! Just prepare them with less liquid so they stay thick. 🔄 Jalapeno and/or Poblano → Use more jalapenos, an additional poblano or green bell pepper for less or more heat! Or swap for canned diced green chiles. 🔄 Green onions → Sub chopped chives, finely diced yellow onion, or a shallot. Or skip them and sprinkle some on top before serving. 🔄 Bacon → Turkey bacon, pancetta, or even crispy prosciutto. Or just leave it out for a vegetarian version! 🔄 Cheddar cheese → Any melty cheese works: Monterey Jack, Colby Jack, or pepper jack for extra spice. 🔄 Smoked paprika → Regular paprika, chili powder, or leave it out! To Make this Ahead: You can mix everything together the day before, pop it in the fridge, and bake it the next day when you’re ready.
