Sheet Pan Mini Meatloaves & Veggies

We’re doing mini meatloaves on a sheet pan with potatoes and green beans so everything cooks together, comes out quickly, and dinner feels way less fussy. Ingredient Substitutions: Ground Meat → Swap the ground beef for ground turkey, chicken, or pork... or even do a mix (half beef + half turkey would be great for a lighter texture that still tastes rich). Sauce → Keep it easy with bottled BBQ sauce instead of the brown sugar–ketchup mix. If your family likes it tangier, add a splash of apple cider vinegar or a spoonful of Dijon mustard. For a little kick, stir in a dash of hot sauce or smoked paprika. Veggies → Use whatever vegetables you’ve got. Asparagus, broccoli, carrots, or Brussels sprouts all work great. If you don’t have mini potatoes, you can use regular russets or sweet potatoes cut into chunks. To Make this Gluten Free: Crackers / Binder: Instead of the crushed saltines, use gluten-free crackers, gluten-free breadcrumbs, or even quick oats! Sauce: Make sure your ketchup and Worcestershire sauce are labeled gluten free. Most store-bought ketchups are, but Worcestershire sometimes contains wheat. Want to make it even faster? Toss on a bag of frozen green beans or mixed veggies right before baking. No need to thaw!
